After sitting looooong hours over this geology I had to do something to clear my mind a little!
What could that be? ? ?
Of course COOKING!
I took everything from the fridge and made a “leftover” meal.
I love left-over-meals, because it seems every time I do that kind of meal I make something different. Something I haven’t done before!
Some of this and some of that, I looove searching all over the kitchen for something I didn’t know that was even in the kitchen. Mixing sauces, vegetables, meats and even fruits I have never mixed before.
What was so amazing about this dinner?
Ok it tasted awesome!
BUT also =====> It only took me 1ö-15 minuits to make it, but it was still like a luxury dinner.
My family didn’t even have a word over how awsome this dinner was!
–And let me tell you, they are not the easiest people to impress, but anyway, more about them later.
It came out as a FANTASTIC dinner, ough! I could have eaten that meal all by myself

Here’s another

Quick Spicy-sweet chicken with couscous and yogurt sauce
Serves 4
What you need:
- Oil ( I use coconut oil, cause it doesn’t have the trans fats normal oil has )
- 2 tablespoons Curry Paste ( I used n Curry paste from Blue Dragon – a must for every home! also if you don’t want it hot, only put one spoon)
- Garlic, 1 piece
- 1 onion ( I used red onion )
- 1 Green pepper
- One box of mushrooms
- 2 sticks of celery
- Chicken breasts (3)
- Honey
- Tamari Sauce ( you can also use soy sauce, tamari is said to be healthier )
- Mango Chutney (1 spoon)
- Cayenne pepper
- 1/2 half cup of nuts ( I used Cashew nuts )
-Cocos
- Cous Cous
-Coriander (fresh )
- Plain yogurt or greek yogurt
- White Tahini (about 1 teaspoon, big teaspoon, not necisarry, just gives a different flavour)
-agave syrup ( not necessary )
Directions:
- Fry together the coconut oil, curry paste, garlic, onion and mango chutney.
- When the onion has got the golden look you can add the green pepper, mushrooms and celery. (All chopped medium/small sized )
- While the vegetables are roasting cut the chicken to small pieces.
- Pour the honey over the chicken and turn it over and over until the chicken is fully covered with honey.
- Mix the chicken with the vegetables, season it with cayenne and fry them together until the chicken is done.
- Then you can add tamari sauce, a splash over the pan, as much as you prefer and the nuts.
- Cook it for about 10 minutes .
- While it’s cooking put the couscous in a bowl, pour boiling hot whater over ( I normally just pour water untill I can’t see the cous cous and the cous cous will soak the water itself )
- When the cous cous is ready ( like 3-5 minuits ) chop 3 (more or less depends on how much couscous you are serving ) coriander leaves and mix them with the couscous. Now the cous cous is ready.
- For the yogurt sauce: blend the yogurt, tahini, agave ( just a tiny drop, only to sweeten it up a bit ) and a bit of koriander if preferred.
Serve it with green lettuce and my family loves mango chutney along with it ( I personally think it makes it too sweet ). - Also if you prefer to sprinkle cocos over the chicken.

I love this thing, it makes EVERYTHING good! Even fish!
Also if a meal I’m making needs a SOS help ( It doesn’t taste as it should have tasted = not good ) I put a spoon of curry paste and it’s all solved
I think it has magic written all over it.
Also you can make the most delicious soups with curry paste, just wait untill I give you the recipe of that one!
I dare you all to try it, it will make so many new things in the kitchen!
