Left-over Dinner

After sitting looooong hours over this geology I had to do something to clear my mind a little!

What could that be? ? ?

Of course COOKING! :)

I took everything from the fridge and made a “leftover” meal.

I love left-over-meals, because it seems every time I do that kind of meal I make something different. Something I haven’t done before!

Some of this and some of that, I looove searching all over the kitchen for something I didn’t know that was even in the kitchen. Mixing sauces, vegetables, meats and even fruits  I have never mixed before.

What was so amazing about this dinner?

Ok it tasted awesome!

BUT also =====> It only took me 1ö-15 minuits to make it, but it was still like a luxury dinner.

My family didn’t even have a word over how awsome this dinner was! :D

–And let me tell you, they are not the easiest people to impress, but anyway, more about them later.

It came out as a FANTASTIC dinner, ough! I could have eaten that meal all by myself :)

Quick Spicy-sweet chicken with couscous and yogurt sauce

Serves 4

What you need:

- Oil ( I use coconut oil, cause it doesn’t have the trans fats normal oil has )

- 2 tablespoons Curry Paste ( I used n Curry paste from Blue Dragon – a must for every home! also if you don’t want it hot, only put one spoon)

- Garlic, 1 piece

- 1 onion ( I used red onion )

- 1 Green pepper

- One box of mushrooms

- 2 sticks of celery

- Chicken breasts (3)

- Honey

- Tamari Sauce ( you can also use soy sauce, tamari is said to be healthier )

- Mango Chutney (1 spoon)

- Cayenne pepper

- 1/2 half cup of nuts ( I used Cashew nuts )

-Cocos

- Cous Cous

-Coriander (fresh )

- Plain yogurt or greek yogurt

- White Tahini (about 1 teaspoon, big teaspoon, not necisarry, just gives a different flavour)

-agave syrup ( not necessary )

Directions:

  • Fry together the coconut oil, curry paste, garlic, onion and mango chutney.
  • When the onion has got the golden look you can add the green pepper, mushrooms and celery. (All chopped medium/small sized )
  • While the vegetables are roasting cut the chicken to small pieces.
  • Pour the honey over the chicken and turn it over and over until the chicken is fully covered with honey.
  • Mix the chicken with the vegetables, season it with cayenne and fry them together until the chicken is done.
  • Then you can add tamari sauce, a splash over the pan, as much as you prefer and the nuts.
  • Cook it for about 10 minutes .
  • While it’s cooking put the couscous in a bowl, pour boiling hot whater over (  I normally just pour water untill I can’t see the cous cous and the cous cous will soak the water itself )
  • When the cous cous is ready ( like 3-5 minuits ) chop 3 (more or less depends on how much couscous you are serving ) coriander leaves and mix them with the couscous. Now the cous cous is ready.
  • For the yogurt sauce: blend the yogurt, tahini, agave ( just a tiny drop, only to sweeten it up a bit ) and a bit of koriander if preferred.
    Serve it with green lettuce and my family loves mango chutney along with it ( I personally think it makes it too sweet ).
  • Also if you prefer to  sprinkle cocos over the chicken.

I looove tasty food. Curry pastes fullfill my wish.

I love this thing, it makes EVERYTHING good! Even fish!

Also if a meal I’m making needs a SOS help ( It doesn’t taste as it should have tasted = not good ) I put a spoon of curry paste and it’s all solved :D

I think it has magic written all over it.

Also you can make the most delicious soups with curry paste, just wait untill I give you the recipe of that one!

I dare you all to try it, it will make so many new things in the kitchen!

Heya!

I woke up 7:30, excited as always to make my awesome oat meal Monster!

At first, it was of course just like any other…

Mmmmm…Promax is my absolute favorite protein, it has this candy taste I just adore.

This morning I had

1/4 cup oat meal

2/4 cup water

1/4 cup protein

Of course I didn’t eat it like alone, I had AB-milk, which tastes similar to yogurt, it both cool’s it down and simply makes it more of a meal.

OK, busted! I am the ultimate cinnamon lover!

You can’t even see the pink monster, I just cover it all with lots of AB-milk and cinnamon…It didn’t take me long to finish that one :)

I hurried straight to school, for a physics experiment.  I arrived, a bit late, buuut who cares?

As I walked into the class room the only thing I saw was this!

…this was only part of the table…I thought to myself..oh god! It didn’t even have room for my study book.

I finished the experiment almost perfectly, the inaccuracy was almost none :) YAY!

…At least the day began quite good :D

I headed straight to singing class

…You all who have your own cars understand me…

I took the bus for the first time in 2 years today…Seriously, I was really looking forward to taking the bus, but as I walked in there it had this HUGE peeing smell, thank god I only had to sit there for 10 minuets!

What if I sat near or on it? :O

Anyway!

For lunch I went to my favorite coffee House, Kaffitár. I got myself a soy latte, extra hot and w/extra foam.

….Of course I had to put so much of Cinnamon that the beautiful leaf they made didn’t show!

oh, and the daily coffee bean covered with chocolate :)

I had Greek Yogurt with my coffee.

Today I had it with pears, 2 dates and oh guess?..Cinnamon!

Greek Yogurt is so good! :) I can use it with everything, I can put any fresh or dried fruit with it.

Even make the most delicious sauces with it! Mmm I love it!

I had an Icelandic class at 14:00 and I was so hungry that I opened my raw bar, I just ate like 1/2 of it :)

I love RAW*REVOLUTION, it so fresh and good. It doesn’t have the artificial taste that I feel all of the other protein bars, that I have tasted, have.

I’ve only bought two of the flavors they produce, the hazelnut and chocolate that I ate today and also the cashew and spirulina, although it’s GREEN, and doesn’t look very yummy! At least my friends can’t stand the color..

Anyway…I’m really looking forward to tasting the other flavors because these two are sooo good!

I dearly recommend it :)

Mmmm….

If you are craving chocolate, this is such a good thing! It’s has such healthy proteins in it. It’s such a feel good bar!

I also snacked on cold haddock…at class, but I just don’t think it’s any interesting.

But still it’s really underestimated! Believe me, snacking a pure haddock is much better than you think.

Even two of my school mates that sat next to me ate more of it than me!

—-That must mean something :)

Anyway!…I should start reading for the geology exam tomorrow!

I’m here!

Hello you all out there!

I have decided to make a new and fresh blog about my lifestyle.

There are two reasons why decided to blog:

Firstly, I want to be dedicated to my healthy and protein lifestyle. Though I eat healthy most of the time, I can have terms when I just collapse and I get carb addict. I’m hoping this blog will motivate me and get me in touch with other persons who are living the same lifestyle as me or trying to change.

Secondly, I absolutely love to cook! I like my kitchen more than my room, seriously!

Enough said..at least for now

I can’t wait to start blogging tomorrow!
